My mouth is on fire. I decided to make chili but instead of using a recipe that looked good, I thought I'd go the easy way and use a seasoning package. And since I now love eating really spicy food (i eat sliced jalapenos for a snack), I thought I'd buy the spicy chili mix. The spicy taco seasoning that I use when i make enchiladas isn't very spicy so I figured the same would hold for the chili mix. Wrong. It was tasty though! I also made cornbread muffins but I used my mom's recipe. Halfway through making the batter, I realized that my mom had made a recipe to serve ten billion people. Right now, the last of the batter is baking. I love the smell of cornbread and then putting butter on it is sooooo good! However, 30 cornbread muffins is a bit much for 1 person. It appears that my breakfast and snacks for the next few days will be a cornbread muffin or 2 (they are a bit tiny). I thought of cutting it in half but until someone can tell me how to divide 3 eggs into half or can provide me with a measuring spoon that is 1/6 teaspoon (if I were to make a third of the batter), I'm stuck making tons of muffins. Maybe I'll invest in a muffin pan that makes bigger muffins. Ooooh! A reason to go to linens n things! My mouth is calming down now.
